Microwave Dhokla

Looking for a healthy snack option? This is something you can manage in 5mins and without the mess of using a stove!

Ingredients:


Base
Gram flour (Besan)........ 1/2 cup
Water............................ 1 cup
Oil................................. 1 tbsp
Ginger........................... 1/2" piece
Green chillies................ 2-3
Eno fruit salt.................. 1 1/2 tsp
Soda Bi Carb................ 1/2 tsp
Lemon juice.................. 2 tsp
Salt............................... 1 tsp
Powdered Sugar........... 1 tsp
Haldi............................. 1/2 tsp

Tempering
Vinegar........................ 1/4 cup
Water.......................... 3/4 cup
Green chillies............... 2-3
Rai............................... 1 tsp
Powdered Sugar.......... 1 tbsp
Oil.................................1 tsp
Corriander.................... To granish

Method:
1. In a bowl, sift flour through a sieve to make it light.
2. Make a paste from the ginger and green chillies and add it.
3. Add water, oil, salt, sugar and haldi and mix into a smooth batter.
4. Add Eno salt and soda to the batter. Pour the lemon juice over it. It will rise into a fluffy mixture instantly.
5. Again beat well for a few seconds.
6. Grease a flat microwave dish with oil on all sides and pour the batter into it.
7. Microwave for 6mins.
8. For the temper, mix all ingredients and microwave for 4mins. (Can make it on the stove too)
9. When the dhokla is ready, pour the temper over it and wait for 1/2hr for it to absorb and become soft.
10. Garnish with chopped corriander and cut into 1" cubes to serve.

Busy Day Cake

No time for elaborate recipes or searching for those hard to find ingredients in grocery stores?

This is the perfect recipe for a risk free baking day!

Ingredients:

Eggless Chocolate Base
Milk-maid..................................... 1tin
White butter (unsalted).................. 1 cup
Sugar (powdered)......................... 2 tbsp
Aerated drink................................ 1 1/4 cups
(Pepsi/Coke/Thumbs Up)
Cocoa.......................................... 5 tbsp
Flour (Maida)............................... 2 1/2 cups
Baking powder............................. 1 1/2 tsp
Soda Bicarb................................. 1 1/2 tsp
Vanilla essence............................. 1/2 tsp

2 minute Icing
Icing Sugar.................................. 1/2 cup
Cocoa......................................... 4 tbsp
Water.......................................... 3 tbsp apprx

Method:

1. Beat milkmaid, sugar and butter in a pan until fluffy.
2. In a separate pan, sift maida and cocoa and mix it with soda bicarb and baking powder.
3. Slowly add the mixture prepared in step 2 to the milkmaid mixture prepared in step 1 and at the same time pour the cola over it.
4. Beat very well till its smooth and light.
5. Butter a baking tin on all sides with a brush and slowly pour the mixture into it. Even out.
6. Bake at 150 C in a pre-heated oven for an hour. Check if complete by inserting a knife into the middle of the cake. Cool for ten mins. Turn upside down to drop out the cake.
7. Mix the ingredients for the icing, and slowly spread on the top and sides.
8. Decorate by grating chocolates, spreading nutties or gems, or simply candles :)
